HEALTHY MEXICAN PIZZA

Servings: 6

Ingredients:

  • 448 g vegan or low-fat refried beans
  • 255 g extra-lean ground beef
  • 1 package taco seasoning mix
  • 6 6-inch corn tortillas
  • 225 g low-fat cheddar cheese, shredded
  • 86 g light sour cream
  • 2 Roma (plum) tomatoes, chopped
  • 2 green onions, chopped
  • 1 can of diced green chilies, drained
  • 8 g black olives, sliced
  • A cast iron tortilla serving pan
  1. Preheat oven to 200ºC (a pizza maker can also be used)
  2. In a large pan, cook beef until evenly browned. Stir in the seasoning packet.
  3. Layer each tortilla with beans and beef. Top a second tortilla and sprinkle with cheese.
  4. Bake tortillas in the preheated oven for about 10 minutes or until cheese has melted.
  5. Arrange tortillas in cast iron Comal pan or plate and top them with sour cream, tomatoes, green onions, chilies, and olives. Let cool slightly before cutting into wedges.

You can cut the tortillas in slices and serve as appetizers or leave it whole as a main dish. The best thing about this Mexican pizza is that you can adjust it to different tastes, add more or lessen toppings and cheese, or use more Mexican hot sauce and hot chili powder.
